Memorial Day is this weekend. It is a time to remember those that have died in service to our country as well as those loved ones that have passed away. Many people consider this weekend as the start to summer and get together with their family and friends. If you celebrate this holiday by having a barbeque, here are a few recipes that we thought you would enjoy. Have a safe and happy holiday!
That Good Salad
3/4 cup canola oil
1/4 cup lemon juice
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 bunches (1 pound each) romaine lettuce, torn
2 cups chopped tomatoes
1 cup (4 ounces) shredded swiss cheese
2/3 cup silvered almonds, toasted, optional
1/2 cup grated parmesan cheese
8 bacon strips, cooked and crumbled
1 cup caesar salad croutons
Directions:
In a jar with a tight-fitting lid, combine the oil, lemon juice, garlic, salt and pepper; cover and shake well. Chill.
In a large serving bowl, toss the romaine, tomatoes, swiss cheese, almonds (if desired), parmesan cheese and bacon.
Shake dressing; pour over salad and toss. Add croutons and serve immediately.
Lemon Four Layer Dessert
First Layer:
1 cup flour
1 cup chopped nuts
1 stick of butter or margarine
Mix together and put in 9×13 pan. Bake at 350 degrees for 20 minutes. Cool.
Second Layer:
8 oz cream cheese, softened
1 cup powdered sugar
1 cup cool whip
Mix and spread over the first layer. Chill.
Third Layer:
2 packages instant lemon pudding (or pudding flavor of your choice)
3 cups milk
Mix and pour over the 2nd layer.
Fourth Layer:
Spread rest of cool whip over the 3rd layer. Refrigerate overnight.
Note: A 12 ounce tub of cool whip was used in the recipe above.
